About the Recipe

Ingredients

  • 2 Tbsp sake

  • 2 Tbsp mirin


  • 1 tsp sugar


  • ½ tsp rice vinegar


  • 3 Tbsp soy sauce


  • ½ tsp miso


  • ¼ tsp katsuobushi (dried bonito flakes) (Lite Grönsaks dashi funkar oxå)


  • ⅛ apple (I used a fuji apple)


  • 2 tsp toasted white sesame seeds

Preparation

  1. Gather all the ingredients. 

  2. Add sake, mirin, sugar, rice vinegar, soy sauce, miso, katsuobushi, and simmer for 1 ½ minutes. 

  3. Strain the sauce. 

  4. Add the sesame seeds and grated apple and ready to use. I recommend letting the sauce sit for half day or overnight in the refrigerator for melding all the flavors together.
