The perfect mussels soup



This is a recipe that i got from my friend Laura that runs a beautiful food blog. If you like red pepper, garlic and mussels then you need to try this. I have made just some small modifications to this recipe and i hope you like.

Serves 3

  • 1.5-2kg mussels
  • 2 garlic cloves
  • parsley (about 1/4 dl)
  • 1 tabs tomato paste
  • 1 red pepper (HOT)
  • black pepper
  • salt
  • 1/3 dl olive oil
  • 1l water

Risotto with grapes and lemon



This is a risotto I made up, i like that the sweetness of the grapes just makes it balanced with the citrus. Try it and let me know what you think; just be honest 😉
Serves 5

  • 6 dl Arborio rice
  • 1/2 lemon
  • 1 yellow onion
  • about 20 grapes
  • 1 liter vegetable broth
  • 1 dl white vine
  • 1 tablespoon of butter
  • 2 tablespoons of oliv oil
  • 1 dl grated parmesan cheese

Gorgeous chocolate fondant



I’m not a big fan of sweets, but from time to time I do eat it. This time my wife aka “Frun i huset” has made a gorgeous chocolate fondant that just melts in the mouth like a chocolate mousse. This is something you can treat any on at any occasion and they will just smile!
Serves 6

Fondant

  • 75 grams of butter
  • 100 grams of dark chocolate (70%, not some cheap one please.)
  • 2 eggs
  • 4 tablespoons of sugar

Raw raspberries

  • 500 grams of raspberries
  • 1 dl jam sugar

Fondant

  1. Preheat the oven to 175 degrees. Grease six oven-able molds or aluminum molds with melted butter or liquid margarine.

Gnocchi di patate e fave con mortadella e pistacchi



This is a recipe that i got from my friend Laura, the recipe is really tasty! The problem you might get with this recipe is that you cant get hold of potatoes that are one season old. In sweden you can get it in some better shops (sometimes).

Pasta with bacon, chili and mozzarella



This is one of my “take what you have at home” and make it a grate pasta recipe. Its a bit hot; but it all works very well together. You should try this when you get a chance!

Serves 6

  • 140 grams bacon
  • 1/3 of a read chili
  • a super small pinch of oregano (take to much and it just tastes oregano!)
  • 130 grams of Mozarella
  • Black pepper
  • 2-3 dl of crushed tomato (depending on how much suce you like)

Mushroom soup with roasted parma ham



The soup is very tasty and therefore; serve only about 1 1/2 dl per person. The crunchy roasted parma ham provides a good saltiness.

Serves 10

500 g mushrooms
1 tablespoon butter
1.5 dl whipping cream
2 pinches of salt
7 dl milk
185 g mushroom cream
1 dl dry sherry
2 teaspoon salt

garnish
100 g mushrooms
1 tablespoon butter
1 tablespoon olive oil
1 pinch salt

chips
20 thin slices of parma ham

Pasta con salame e la mortadella



This is a wonderful recipe i made without planning it. Its Italian alike but its now Swedish 🙂 I hope you like it!
 

Serves 4

  • 1 Read Onion
  • 1 clove of garlic
  • 10 pieces of sun dried tomatoes in oil
  • 125 gram of Salami (i used what i had at home and it was a Hungarian Pick Salami)
  • 80 gram Mortadella
  • 2 bay leaves
  • 1 can crushed tomtoes
  • 1 dl grated parmesan cheese
  • 1 dl white vine
  • basil
  • oliv oil
  • black pepper and salt

Cook like this…

  1. Chop that onion in small pices
  2. Slice the garlic super thin
  3. slice the dried tomatoes in about 3 pices
  4. Chop the Salami in smaller pices
  5. Slice and chop the Mortadella so that you get 2*2 cm square slices.

Pasta alla Norma



A very tasty recipe that i got from a friend and a very talented chef. This is a must do recipe!

Serves 3

  • 300 gram spaghetti eller penne
  • 1 medium stor gul lök
  • 1 1/2 Aubergine
  • 6 dl passerade tomater eller tomatsås.
  • Ca 1,5 dl riven Parmigiano
  • Ca 130 gram Ricotta riven
  • Färsk basilika
  • Olivoja
  • Salt

Get cooking

  1. Skala och skär Aubergine i tärningar ca 1.5cm stora.

Bönor med vitlök och rosmarin



You need to do this, but you have to be hungry, i can’t eat it when I’m not 🙂
för 2 pers

  • 1/2 dl olivoja
  • 2 vitlöksklyfrtor
  • 200 gr kidneybönor
  • 200 gr stora vita eller svara bönor
  • en kvist med rosmarin
  1. Hetta upp olivojan i en liten kastrull
  2. Skiva vitlöken och lägg i kastrullen tillsammans med rosmarin
  3. Häll i bönorna och låt det hela sjuda i ett par minuter.

Gör din egen pasta



Super enkelt, supper kul och smakar super!
För 4 pers

  • 3 ägg
  • 150g vetemjöl
  • 150 g durumvete

Gör det traditionellt

  • Häll allt mjöl på arbetsytan, som en fontän eller en krater,
  • Tillsätt äggen i mitten och med hjälp av en gaffel, få dem att börja gå ihop med mjölet (ta lite ägg i taget). Fortsätt att blanda med händerna kraftigt tills en boll är slät och fin.
